The most common reason a busy front desk goes back to paper is not preference, it is a dead phone or dropped wifi. Keeping a printed sheet in a drawer costs nothing and means a bad ten minutes never becomes a lost hour of walk-ins.
Why the time-in column matters most
Four names ahead of someone means nothing on its own. Four names ahead, the first written down forty minutes ago, tells you exactly how your service is running and lets you quote a wait you will actually hit. It is one extra column and it is the difference between a record and a tool.

Number, name, time in, and a box to tick when served. Party size if you are seating groups. Time in is the one most templates omit and the one that does the most work - without it you cannot answer how much longer anyone has to wait except by guessing, which is the question the sheet exists to handle.
About fifteen at a comfortable size to write in. You can push it to forty here, but past twenty the rows get tight for a biro and a rushed hand, and an illegible sheet is worse than a second page.
Think twice. A clipboard on a counter shows every previous customer's name and number to whoever signs in next, and you become responsible for shredding it. If you do collect them, keep the sheet turned away from the queue and destroy it at the end of the day. Not collecting them at all is the simpler answer.
